I recommend this cold soup for the hot summer days. I have tried it in Latvia and since then it has become one of my favourites.
So here ist the recipe:
1,5 l buttermilk (or kefir, or yoghurt)
1,5 l cold sparkiling mineral water
ice cubes (if you want to eat it cold immediately)
bunch of radishes
1 big cucumber
1 bunch of spring onions
1 bunch of dill
1 bunch of parsley
5 cooked beet roots
salt, pepper, lemon juice
2 boiled eggs (optionally)
How to make it:
Pour the buttermilk and cold sparkiling mineral water in a big pot. Grab a grater and grate the beetroots, cut the cucumber, radishes, spring onions, herbs and put it all in the pot. Add the lemon juice (to taste), salt and pepper. Stir and put it all in a fridge, let it cool down and that is it.
It is perfect if you make it in the morning and eat it in the evening after a long hot working day (like me today:). So it is wonderful.
You cann add a boiled egg and some creme fraiche to make it lovely... But that is optional.
And this colour just makes you happy. :D
